Curried Lentils

Ingredients

  • 1 Tbsp olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 3 medium carrots
  • 1 cup uncooked brown lentils
  • 2 Tbsp curry powder
  • 15 oz can tomato sauce
  • to taste salt
  • ½ bunch fresh cilantro (optional)

Instructions

  1. 1. Spread lentils on a baking sheet and remove any stones.
  2. 2. Boil 3 cups of water in a pot, add lentils, and simmer for 20 minutes until tender.
  3. 3. Drain the lentils.
  4. 4. Mince garlic and dice onion and carrots.
  5. 5. Sauté onion, garlic, and carrots in olive oil over medium heat until onions are transparent.
  6. 6. Add curry powder and sauté for another minute.
  7. 7. Stir in cooked lentils and tomato sauce, heating through for about 5 minutes.
  8. 8. Taste and add salt if needed, then serve topped with cilantro.
