Curried Lentils

can tomato sauce

fresh cilantro (optional)
Instructions
- 1. Spread lentils on a baking sheet and remove any stones.
- 2. Boil 3 cups of water in a pot, add lentils, and simmer for 20 minutes until tender.
- 3. Drain the lentils.
- 4. Mince garlic and dice onion and carrots.
- 5. Sauté onion, garlic, and carrots in olive oil over medium heat until onions are transparent.
- 6. Add curry powder and sauté for another minute.
- 7. Stir in cooked lentils and tomato sauce, heating through for about 5 minutes.
- 8. Taste and add salt if needed, then serve topped with cilantro.
