Ingredients

The main ingredients

  • 56 ounces whole peeled tomatoes
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 8 ounces Italian sausage
  • 3 cups cooked quinoa
  • 2 ounces baby spinach

Optional toppings

  • to taste parmesan or mozzarella cheese
  • to taste fresh basil

Instructions

  1. 1. Preheat the oven to 425°F (220°C).
  2. 2. Line a rimmed baking sheet with parchment paper.
  3. 3. In a bowl, break up the tomatoes and mix in garlic and olive oil, seasoning with salt and pepper.
  4. 4. Roast the tomato mixture for 40 to 50 minutes, stirring occasionally.
  5. 5. While the tomatoes roast, cook the sausage according to package directions and slice or crumble it.
  6. 6. Once the tomatoes are done, transfer the mixture to a large pot and bring to a boil.
  7. 7. Reduce the heat and add the cooked sausage, quinoa, and spinach, cooking until the spinach wilts.
  8. 8. Top with cheese and garnish with fresh basil if desired.
