Instructions
- 1. Preheat the oven to 425°F (220°C).
- 2. Line a rimmed baking sheet with parchment paper.
- 3. In a bowl, break up the tomatoes and mix in garlic and olive oil, seasoning with salt and pepper.
- 4. Roast the tomato mixture for 40 to 50 minutes, stirring occasionally.
- 5. While the tomatoes roast, cook the sausage according to package directions and slice or crumble it.
- 6. Once the tomatoes are done, transfer the mixture to a large pot and bring to a boil.
- 7. Reduce the heat and add the cooked sausage, quinoa, and spinach, cooking until the spinach wilts.
- 8. Top with cheese and garnish with fresh basil if desired.
