35-Minute Quinoa and Sausage

Instructions
- Rinse the quinoa and soak for at least 20 minutes if desired.
- Chop the sausages and cook them in a skillet until cooked through, then set aside.
- In the same skillet, sauté the onion and sun-dried tomatoes for about 8 minutes.
- Add the quinoa and garlic to the pan and cook for an additional 2 minutes, stirring often.
- Pour in the broth, add salt and pepper, and bring to a simmer.
- Reduce the heat to low, cover, and cook for 20 minutes.
- Remove from heat, stir in the parsley and sausage, and let sit covered for 5 more minutes.
- Fluff with a fork and serve.
