35-Minute Quinoa and Sausage

Ingredients

  • 8 ounce sausage, chopped
  • ½ onion chopped fine
  • ¼ cup sun-dried tomatoes
  • 1 cup quinoa, rinsed
  • 1 clove garlic, minced
  • 1 ½ cups chicken or vegetable broth
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground pepper
  • 1 tablespoon parsley or cilantro, minced

Instructions

  1. Rinse the quinoa and soak for at least 20 minutes if desired.
  2. Chop the sausages and cook them in a skillet until cooked through, then set aside.
  3. In the same skillet, sauté the onion and sun-dried tomatoes for about 8 minutes.
  4. Add the quinoa and garlic to the pan and cook for an additional 2 minutes, stirring often.
  5. Pour in the broth, add salt and pepper, and bring to a simmer.
  6. Reduce the heat to low, cover, and cook for 20 minutes.
  7. Remove from heat, stir in the parsley and sausage, and let sit covered for 5 more minutes.
  8. Fluff with a fork and serve.
