Cajun Quinoa Pilaf

Ingredients

The pilaf

  • 1 cup quinoa
  • 1 red onion chopped fine
  • 1 teaspoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1 ΒΌ cups vegetable broth
  • 2 sticks celery chopped
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme

The sausage

  • 8 ounces sausage (vegan field roast or tempeh sausage)
  • 1 red pepper chopped

Instructions

  1. 1. Spray a large saucepan with olive oil spray and heat to medium.
  2. 2. Add the chopped onion and cook for 8 minutes.
  3. 3. Stir in quinoa, garlic, and Cajun seasoning, cooking for an additional 2 minutes.
  4. 4. Add vegetable broth, bring to a simmer, then reduce heat to low and cover, cooking for 30 minutes.
  5. 5. Remove from heat and let sit covered for 5 minutes.
  6. 6. Meanwhile, spray a large skillet with olive oil and heat to medium.
  7. 7. Add sausage and cook until browned and cooked through.
  8. 8. Add chopped pepper, celery, parsley, and thyme, cooking for about 8 minutes.
  9. 9. Stir in the cooked quinoa and cook for another 3 minutes.
  10. 10. Remove from heat and serve warm.
