Cajun Quinoa Pilaf

The sausage

sausage (vegan field roast or tempeh sausage)

Instructions
- 1. Spray a large saucepan with olive oil spray and heat to medium.
- 2. Add the chopped onion and cook for 8 minutes.
- 3. Stir in quinoa, garlic, and Cajun seasoning, cooking for an additional 2 minutes.
- 4. Add vegetable broth, bring to a simmer, then reduce heat to low and cover, cooking for 30 minutes.
- 5. Remove from heat and let sit covered for 5 minutes.
- 6. Meanwhile, spray a large skillet with olive oil and heat to medium.
- 7. Add sausage and cook until browned and cooked through.
- 8. Add chopped pepper, celery, parsley, and thyme, cooking for about 8 minutes.
- 9. Stir in the cooked quinoa and cook for another 3 minutes.
- 10. Remove from heat and serve warm.
