Herbed Quinoa Pilaf

Ingredients

  • cup uncooked quinoa
  • 1 ⅓ cups water or broth
  • 2 tablespoons lemon juice
  • 1 tablespoon avocado oil or olive oil
  • 1 teaspoon honey
  • ½ teaspoon garlic powder
  • cup dried apricots, diced or sliced
  • 2 green onions white and green parts thinly sliced
  • 3 tablespoons sliced or slivered almonds, toasted
  • ¼ cup chopped fresh cilantro leaves
  • 2 tablespoons chopped fresh mint leaves
  • fine to taste salt
  • fine to taste black pepper
  • arugula for serving

Instructions

  1. Rinse the quinoa in a fine mesh strainer with cool water for 20-30 seconds, then transfer to a saucepan with water and salt.
  2. Bring to a boil, cover, and reduce heat to simmer for 15 minutes until liquid is absorbed. Let it stand covered for 5 minutes, then fluff with a fork.
  3. In a small bowl, whisk together lemon juice, oil, honey, and garlic powder. Season with salt and pepper to taste.
  4. In a large bowl, combine cooked quinoa with apricots, onions, almonds, cilantro, and mint. Pour the dressing over and toss gently.
  5. Serve over a bed of arugula if desired, and store leftovers in the refrigerator.
