Herbed Quinoa Pilaf

Instructions
- Rinse the quinoa in a fine mesh strainer with cool water for 20-30 seconds, then transfer to a saucepan with water and salt.
- Bring to a boil, cover, and reduce heat to simmer for 15 minutes until liquid is absorbed. Let it stand covered for 5 minutes, then fluff with a fork.
- In a small bowl, whisk together lemon juice, oil, honey, and garlic powder. Season with salt and pepper to taste.
- In a large bowl, combine cooked quinoa with apricots, onions, almonds, cilantro, and mint. Pour the dressing over and toss gently.
- Serve over a bed of arugula if desired, and store leftovers in the refrigerator.
