Tomato Quinoa Pilaf

Instructions
- Heat oil in a saucepan over medium heat and sauté onions or shallots for 5 minutes.
- Add minced garlic and cook for an additional 30 seconds.
- Stir in quinoa and sauté for 2 minutes.
- Pour in the vegetable broth, salt, and cayenne pepper, then bring to a boil.
- Reduce heat to a simmer, cover, and cook for 18 minutes until all liquid is absorbed.
- Remove from heat and let sit covered for 5 minutes.
- Stir in tomatoes, parsley, basil, thyme, lemon juice, and feta before serving warm.
