Tomato Quinoa Pilaf

Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped shallots or red onion
  • 1 teaspoon minced garlic
  • 2 cups quinoa, rinsed
  • cups vegetable broth
  • ½ teaspoon sea salt
  • ¼ teaspoon cayenne pepper
  • cups grape or cherry tomatoes, quartered
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons lemon juice
  • 6 ounces crumbled feta cheese

Instructions

  1. Heat oil in a saucepan over medium heat and sauté onions or shallots for 5 minutes.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in quinoa and sauté for 2 minutes.
  4. Pour in the vegetable broth, salt, and cayenne pepper, then bring to a boil.
  5. Reduce heat to a simmer, cover, and cook for 18 minutes until all liquid is absorbed.
  6. Remove from heat and let sit covered for 5 minutes.
  7. Stir in tomatoes, parsley, basil, thyme, lemon juice, and feta before serving warm.
