Sausage Zucchini and Brown Rice

black beans, drained and rinsed

Instructions
- Heat olive oil in a non-stick skillet over medium-high heat.
- Sauté the onion for 4 minutes, then add zucchini, bell pepper, and garlic, and sauté for an additional 2 minutes.
- Push the veggies to one side and add the sausage to the empty side, cooking until browned.
- Add rice, tomatoes, and chicken broth, then season with chili powder, cumin, thyme, cayenne, salt, and pepper.
- Stir in the black beans and bring the mixture to a boil.
- Cover and reduce heat to medium, allowing to boil gently for 5-6 minutes.
- Remove from heat and let rest for 8-10 minutes until rice is tender.
- Toss in parsley and serve warm with cheese if desired.
