Italian Sausage Bean and Rice Skillet

Ingredients

  • 1 lb uncooked Italian turkey sausage
  • 1 small red onion, diced
  • 1 medium zucchini, chopped
  • 4 cloves garlic, minced
  • 1 ½ cups uncooked long grain white rice
  • 1 15.5 oz can cannellini beans, drained and rinsed
  • 1 15 oz can petite diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 3 ½ cups reduced sodium chicken broth

Instructions

  1. 1. Lightly mist a large sauté pan with cooking spray and heat over medium.
  2. 2. Add the sausage and cook, breaking it up until it starts to brown.
  3. 3. Drain any excess grease from the pan.
  4. 4. Stir in the chopped onion and zucchini, cooking for another 5 minutes until softened.
  5. 5. Add the minced garlic and cook for another 30-60 seconds until fragrant.
  6. 6. Stir in the rice and cook for another minute.
  7. 7. Add the beans, diced tomatoes, tomato sauce, balsamic vinegar, Italian seasoning, salt, pepper, and red pepper flakes, and stir to combine.
  8. 8. Pour in the broth and stir together.
  9. 9. Increase heat to bring the mixture to a boil, then cover and reduce heat to low.
  10. 10. Simmer for 22-28 minutes, stirring occasionally until the rice is cooked and liquid is mostly absorbed.
  11. 11. Serve warm.
