Italian Sausage and White Bean Skillet

Ingredients

  • 1 lb. Italian sausage (hot, mild, or sweet)
  • 1 Tbsp olive oil
  • 2 15 oz. cans cannellini beans
  • 8 oz. spinach
  • to taste freshly cracked black pepper

Instructions

  1. 1. Remove the casing from the sausage and add it to a large skillet with olive oil.
  2. 2. Sauté the sausage over medium heat, breaking it into pieces until browned and crispy (about 10 minutes).
  3. 3. While the sausage cooks, rinse and drain the cannellini beans.
  4. 4. Once the sausage is crispy, add the beans and freshly cracked pepper, stirring gently to combine.
  5. 5. Roughly chop the spinach and add it to the skillet in batches, stirring until wilted.
  6. 6. Turn off the heat and taste the mixture, adding salt if needed.
  7. 7. Serve hot.
