White Beans with Tomato and Sausage

Ingredients

  • 1 Tbsp olive oil
  • 2 links Italian Sausage (about 8oz. total)
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 28oz. can crushed tomatoes
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • 1 pinch crushed red pepper (optional)
  • to taste salt
  • to taste freshly cracked black pepper
  • 2 15oz. cans Great Northern beans
  • 4 oz. frozen chopped spinach

Instructions

  1. Heat olive oil in a large pot and cook the sausage links until golden brown, then slice them into rounds.
  2. Sauté the sausage slices until fully browned, then add diced onion and minced garlic, cooking until the onions are soft.
  3. Add crushed tomatoes, dried basil, oregano, red pepper flakes, and black pepper to the pot and stir to combine.
  4. Rinse and drain the Great Northern beans, then add them along with frozen spinach to the pot.
  5. Stir the mixture and heat through for about 10 minutes, adding salt to taste.
  6. Serve hot with crusty bread or over toast.
