Veggie Sausage White Bean Skillet

Instructions
- Blend half of the white beans with the vegetable stock until smooth.
- In a skillet, heat olive oil and brown the sliced veggie sausages on both sides.
- Remove the sausages and sauté the shallots until soft.
- Add sun dried tomatoes, garlic, nutritional yeast, oregano, and chillies to the skillet and stir.
- Add the remaining white beans and season with salt and pepper.
- Pour in the blended bean mixture and bring to a boil, then simmer until slightly reduced.
- Stir in balsamic vinegar and kale until wilted.
- Return the browned sausages to the skillet and mix well before serving.
