Veggie Sausage White Bean Skillet

Ingredients

The base

  • 2 cans (19-oz/591 ml) white beans
  • 1 ⅓ cups vegetable stock
  • 2 tablespoons olive oil
  • 4 pieces veggie sausages
  • 1 medium shallot
  • ¼ cup sun dried tomatoes
  • 3 cloves garlic
  • 2 tablespoons nutritional yeast
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground chillies
  • to taste sea salt
  • to taste ground black pepper
  • 1 teaspoon balsamic vinegar
  • 4 cups chopped kale

For serving

  • to taste Vegan parmesan
  • to taste extra ground chillies or chili crisp

Instructions

  1. Blend half of the white beans with the vegetable stock until smooth.
  2. In a skillet, heat olive oil and brown the sliced veggie sausages on both sides.
  3. Remove the sausages and sauté the shallots until soft.
  4. Add sun dried tomatoes, garlic, nutritional yeast, oregano, and chillies to the skillet and stir.
  5. Add the remaining white beans and season with salt and pepper.
  6. Pour in the blended bean mixture and bring to a boil, then simmer until slightly reduced.
  7. Stir in balsamic vinegar and kale until wilted.
  8. Return the browned sausages to the skillet and mix well before serving.
