Sausage and Kale Skillet

Ingredients

  • ½ package Italian Sausage
  • 1 bunch kale
  • 1 15oz. can chickpeas
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella

Instructions

  1. Squeeze the sausage from the casings into a large skillet and cook over medium heat until browned, breaking it into pieces as it cooks.
  2. While the sausage cooks, remove the stems from the kale and slice it into thin strips, then rinse the kale.
  3. Add the kale to the skillet and stir until it wilts.
  4. Drain and rinse the chickpeas, then add them to the skillet and stir to combine.
  5. Pour the marinara sauce over the mixture and top with shredded cheese.
  6. Cover the skillet and let it simmer until the cheese is melted.
