Sausage Tortellini Skillet

Ingredients

  • 1 lb uncooked hot Italian turkey or poultry sausage
  • 1 small onion, diced
  • 8 oz sliced white mushrooms
  • 8 oz chopped zucchini
  • 2 cloves garlic, minced
  • 15 oz can tomato sauce
  • 15 oz can diced tomatoes
  • ¼ cup tomato paste
  • 2 tablespoons sliced fresh basil
  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon salt
  • 1 ½ oz Parmesan cheese, freshly shredded
  • 20 oz refrigerated cheese tortellini
  • 1 cup shredded 2% Mozzarella cheese

Instructions

  1. 1. Cook the sausage in a large skillet over medium heat, breaking it apart until browned.
  2. 2. Add the onion, mushrooms, zucchini, and garlic, cooking until the vegetables are softened.
  3. 3. Stir in the tomato sauce, diced tomatoes, tomato paste, basil, Italian seasoning, salt, Parmesan, and tortellini until combined.
  4. 4. Cover and bring to a bubble, then reduce heat and simmer until the tortellini is cooked.
  5. 5. Remove the lid, sprinkle Mozzarella on top, cover again until melted, then serve.
