Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add minced garlic and sauté for 30 seconds.
- Add turkey sausage, breaking it up, and cook until browned and cooked through.
- Stir in marinara sauce, diced tomatoes, chicken broth, and water; bring to a light boil.
- Add tortellini, pressing it down into the sauce, then reduce heat to medium-low and cover.
- Simmer for about 10 minutes, stirring once halfway through, until tortellini is cooked.
- Stir in spinach and parsley, season with pepper, and allow spinach to wilt.
- Add basil and serve warm.
