Ingredients

The shortcake

  • 1 cup Bisquick Heart Smart Baking Mix
  • 2 tablespoons granulated sugar
  • cup skim milk

The toppings

  • 1 cup strawberries, sliced
  • 2 teaspoons powdered sugar
  • 1 cup blueberries
  • cup fat-free whipped topping

Instructions

  1. Preheat the oven to 425°F.
  2. Combine the sliced strawberries and powdered sugar in a small bowl and set aside.
  3. In a large bowl, mix the Bisquick, granulated sugar, and skim milk until a dough forms.
  4. Drop 4 equal spoonfuls of the dough onto an ungreased baking sheet.
  5. Bake for 10-12 minutes until golden.
  6. Cut each shortcake in half horizontally.
  7. Top the bottom half of each shortcake with strawberries and blueberries, then cover with the top half.
  8. Spoon remaining berries over the top and finish with whipped topping.
