Mediterranean Tortellini Salad

The salad

frozen cheese tortellini, cooked and cooled

artichoke hearts in quarters, drained

mini-bocconcini, cut in half

grape tomatoes, cut in half

green apple, cored and diced

pitted kalamata olives

sliced green olives

chopped walnuts

finely chopped fresh basil leaves
The dressing

extra-virgin olive oil

¼
cup
white balsamic vinegar

garlic, finely minced

Dijon mustard

freshly ground black pepper
Instructions
- Cook the tortellini according to package instructions and rinse under cold water until chilled.
- Allow the tortellini to drain for a few minutes.
- While the pasta is cooking, prepare the other salad components and the dressing.
- Combine all dressing ingredients in a bowl and whisk until emulsified.
- In a large mixing bowl, combine all salad ingredients except for the basil.
- Pour the dressing over the salad and mix until well combined.
- Add the chopped basil and toss delicately.
- Let the salad sit for about 15 minutes to allow flavors to meld before serving.
