Italian Tortellini Salad

Tortellini Salad

fresh cheese tortellini, cooked and cooled

natural salami, cubed

cherry or grape tomatoes, halved

English cucumber, diced

fresh mini mozzarella balls

cup
fresh parsley leaves, chopped, divided

pepperoncini, chopped (optional)
Instructions
- Whisk together the dressing ingredients in a large bowl.
- Cook the tortellini according to package directions, then drain and rinse with cold water.
- Chop the salad ingredients including tomatoes, cucumber, salami, parsley, and pepperoncini.
- Fold the cooked tortellini, salami, tomatoes, cucumber, mozzarella, and half of the parsley into the dressing until combined.
- Top with the remaining parsley and pepperoncini, cover, and refrigerate for at least 30 minutes before serving.
