Ingredients

The dressing

  • cup fresh lime juice
  • ¼ cup light soy sauce
  • 1 Tbsp. palm or light brown sugar
  • 2 tsp. chile powder
  • 1 tsp. kosher salt

The main ingredients

  • ¼ cup glutinous rice
  • 2 Tbsp. vegetable oil
  • 6 small shallots, thinly sliced
  • 3–4 stalks lemongrass, bottom third only, tough outer layers removed, finely chopped
  • lb. smoked or firm tofu, drained, cut into ¼” cubes
  • 2 Tbsp. black sesame seeds
  • cups chopped mixed tender herbs (such as Thai basil and/or mint)
  • to taste kosher salt
  • to taste chile powder
  • to taste lime juice
  • as needed tender lettuce leaves (for serving)

Instructions

  1. Mix lime juice, soy sauce, palm sugar, chile powder, and salt in a large bowl to make the dressing.
  2. Toast the glutinous rice in a dry skillet over medium heat until golden and fragrant, then grind it coarsely.
  3. Heat oil in the same pan and cook shallots and lemongrass until softened, then add to the dressing.
  4. Add tofu, sesame seeds, and rice powder to the bowl, and toss gently to combine. Adjust seasoning as needed.
  5. Stir in the herbs and serve with lettuce leaves and additional sesame seeds.
