Smoked Tofu Larb With Lemongrass

Instructions
- Mix lime juice, soy sauce, palm sugar, chile powder, and salt in a large bowl to make the dressing.
- Toast the glutinous rice in a dry skillet over medium heat until golden and fragrant, then grind it coarsely.
- Heat oil in the same pan and cook shallots and lemongrass until softened, then add to the dressing.
- Add tofu, sesame seeds, and rice powder to the bowl, and toss gently to combine. Adjust seasoning as needed.
- Stir in the herbs and serve with lettuce leaves and additional sesame seeds.
