broad leaf greens such as romaine or bibb (or cabbage)
Instructions
- Chop the shallot and garlic.
- Heat sesame oil in a large skillet over medium-high heat and add shallot and garlic, cooking for 1-2 minutes.
- Add the ground pork, breaking it up into small bits, and cook until browned and crispy, about 10-12 minutes.
- While the pork is cooking, zest the lime and chop the green onions, cilantro, mint, and cucumber.
- Once the pork is browned, reduce heat to low and mix in lime zest and juice, green onions, cilantro, mint, fish sauce, apple cider vinegar, and chipotle powder. Simmer for 2-3 minutes.
- Taste and season with salt, pepper, or additional chipotle powder as desired.
- Remove from heat and stir in cucumber pieces.
- Serve in a bowl or in lettuce or cabbage leaves.
