Ingredients

The main ingredients

  • 1 unit shallot, finely diced
  • 4 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 lbs ground pork (can sub ground chicken)
  • 1 unit lime, juice and zest
  • 3 unit green onions, diced
  • ¼ cup cilantro, diced
  • ¼ cup mint, diced
  • 1 unit english cucumber, cut into small cubes
  • 1 tbsp fish sauce
  • 1 tbsp apple cider vinegar
  • ½ tsp chipotle powder

For serving (optional)

  • 2 bunches broad leaf greens such as romaine or bibb (or cabbage)

Instructions

  1. Chop the shallot and garlic.
  2. Heat sesame oil in a large skillet over medium-high heat and add shallot and garlic, cooking for 1-2 minutes.
  3. Add the ground pork, breaking it up into small bits, and cook until browned and crispy, about 10-12 minutes.
  4. While the pork is cooking, zest the lime and chop the green onions, cilantro, mint, and cucumber.
  5. Once the pork is browned, reduce heat to low and mix in lime zest and juice, green onions, cilantro, mint, fish sauce, apple cider vinegar, and chipotle powder. Simmer for 2-3 minutes.
  6. Taste and season with salt, pepper, or additional chipotle powder as desired.
  7. Remove from heat and stir in cucumber pieces.
  8. Serve in a bowl or in lettuce or cabbage leaves.
