Vegan Stuffed Mushrooms

Instructions
- Preheat the oven to 350°F.
- Toast walnuts on a lined baking sheet for about 10 minutes until golden and fragrant.
- Wipe dirt off the mushrooms with a damp cloth and carefully remove the stems.
- Place mushrooms hole side up on the baking sheet and bake for 15 minutes.
- Pulse the toasted walnuts in a food processor until finely chopped.
- Add basil, spinach, garlic, lemon juice, and salt to the food processor and pulse until well combined.
- Scrape down the sides and add hummus, blending until fully combined.
- Spoon the mixture evenly into the center of each mushroom.
- Arrange the stuffed mushrooms on the baking sheet and bake for an additional 10 minutes.
