Vegan Stuffed Mushrooms

Ingredients

  • 1 package white button stuffing mushrooms (about 9 mushrooms)
  • ¼ cup walnuts, toasted
  • 1 cup fresh basil, packed
  • 1 cup spinach, packed
  • 2 cloves garlic, chopped
  • 2 tsp lemon juice
  • ¼ tsp salt
  • ¼ cup roasted garlic hummus

Instructions

  1. Preheat the oven to 350°F.
  2. Toast walnuts on a lined baking sheet for about 10 minutes until golden and fragrant.
  3. Wipe dirt off the mushrooms with a damp cloth and carefully remove the stems.
  4. Place mushrooms hole side up on the baking sheet and bake for 15 minutes.
  5. Pulse the toasted walnuts in a food processor until finely chopped.
  6. Add basil, spinach, garlic, lemon juice, and salt to the food processor and pulse until well combined.
  7. Scrape down the sides and add hummus, blending until fully combined.
  8. Spoon the mixture evenly into the center of each mushroom.
  9. Arrange the stuffed mushrooms on the baking sheet and bake for an additional 10 minutes.
