Vegan Pesto Stuffed Mushrooms

Ingredients

The mushrooms

  • 12 whole Mushrooms

The pesto

  • ½ cup Raw Walnuts
  • 1 cup Fresh Basil
  • 1 ½ cups Fresh Spinach
  • 1 whole Lemon
  • 3 cloves Garlic
  • ¾ teaspoon Sea Salt
  • ¼ cup Water
  • 2 tablespoons Grated Vegan Parmesan Cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper and spray it with oil.
  3. Wash and dry the mushrooms, then cut out the stems and place them on the baking sheet.
  4. In a food processor, combine the remaining ingredients and pulse for about 1 minute until well mixed.
  5. Fill each mushroom cavity with about 1 tablespoon of pesto.
  6. Bake the stuffed mushrooms for 20-22 minutes.
  7. Remove from the oven and sprinkle with parmesan cheese if desired.
  8. Serve immediately while warm.
