Vegan Pesto Stuffed Mushrooms

Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper and spray it with oil.
- Wash and dry the mushrooms, then cut out the stems and place them on the baking sheet.
- In a food processor, combine the remaining ingredients and pulse for about 1 minute until well mixed.
- Fill each mushroom cavity with about 1 tablespoon of pesto.
- Bake the stuffed mushrooms for 20-22 minutes.
- Remove from the oven and sprinkle with parmesan cheese if desired.
- Serve immediately while warm.
