Flavourful Vegetable Stock

Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onions until they have deep brown edges, about 5 minutes.
- Add carrots and celery, and sauté until celery is bright green, about 3 minutes.
- Add chopped leeks and smashed garlic, and sauté until leeks are bright green, about another 3 minutes.
- Stir in thyme, parsley, bay leaves, and black peppercorns.
- Add a splash of water and scrape up the brown bits from the bottom of the pot.
- Pour in the remaining water and stir, then bring to a boil.
- Simmer the stock with the lid slightly askew for 30 minutes.
- Strain the stock, discarding the solids, and season with salt if desired.
- Store in jars and refrigerate for up to 1 week or freeze for up to 6 months.
