Ingredients

The soup

  • 3 cups water
  • ¼ tsp salt
  • 1.75 oz rice vermicelli noodles
  • 2 tbsp white miso paste
  • ¼ cup hot water
  • 1 mushroom sliced thinly
  • 1 tsp wakame flakes
  • 1.75 oz soft tofu, cut into ½” cubes

To garnish

  • to taste chopped green onion
  • to taste black and white sesame seeds
  • to taste toasted sesame oil

Instructions

  1. Bring water and salt to a boil.
  2. Dilute the miso in hot water and prepare the other ingredients.
  3. Add rice vermicelli to boiling water and cook until tender, about 1 minute.
  4. Remove from heat and add wakame flakes and mushrooms, stirring gently.
  5. Stir in diluted miso and add cubed tofu.
  6. Transfer to a serving bowl and garnish with green onion, sesame seeds, and sesame oil.
  7. Serve immediately.
