Slow Cooker Apple Chicken Curry

Instructions
- Heat olive oil in a skillet over medium-low heat and sauté onion and celery for a few minutes.
- Transfer the sautéed onion and celery to the slow cooker, then add apples and raisins.
- Trim fat from chicken thighs and place them on top of the apple mixture in the slow cooker.
- In a measuring cup, combine chicken broth, curry powder, cumin, and cinnamon, then pour over the chicken.
- Cook on low for 1½ to 2 hours until the chicken reaches an internal temperature of 165°F.
- Remove chicken from the slow cooker, cut into bite-sized pieces, and return to the pot.
- Stir everything together and add salt to taste if needed.
- Serve warm over rice or rice noodles.
