Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 ribs celery, chopped
  • 2 medium apples, peeled, cored, and chopped
  • ½ cup raisins
  • lbs chicken thighs
  • 1 cup chicken broth
  • 2 tsp curry powder
  • ½ tsp cumin
  • ¼ tsp cinnamon
  • ½ tsp salt (optional)

Instructions

  1. Heat olive oil in a skillet over medium-low heat and sauté onion and celery for a few minutes.
  2. Transfer the sautéed onion and celery to the slow cooker, then add apples and raisins.
  3. Trim fat from chicken thighs and place them on top of the apple mixture in the slow cooker.
  4. In a measuring cup, combine chicken broth, curry powder, cumin, and cinnamon, then pour over the chicken.
  5. Cook on low for 1½ to 2 hours until the chicken reaches an internal temperature of 165°F.
  6. Remove chicken from the slow cooker, cut into bite-sized pieces, and return to the pot.
  7. Stir everything together and add salt to taste if needed.
  8. Serve warm over rice or rice noodles.
