Ingredients

The soup

  • ½ small yellow onion
  • 1 clove garlic
  • 1 pound cauliflower
  • cups vegetable broth
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • ¼ to ½ teaspoon curry powder
  • a pinch cayenne pepper
  • to taste sea salt
  • to taste freshly ground black pepper

For garnish

  • to taste Creamy Kale Pepita Pesto
  • optional microgreens
  • optional red pepper flakes
  • for serving naan bread

Instructions

  1. Preheat the oven to 425°F.
  2. Wrap the onion and garlic in foil with olive oil, salt, and pepper, then roast for 20 to 25 minutes.
  3. Boil the cauliflower in salted water for 8 to 10 minutes until fork-tender.
  4. Blend the cauliflower, roasted onion, garlic, vegetable broth, olive oil, lemon juice, curry powder, cayenne, salt, and pepper until smooth.
  5. Taste and adjust seasonings as desired.
  6. Serve with swirls of pesto, microgreens, and red pepper flakes, alongside naan.
