Instructions
Preheat the oven to 425°F.
Wrap the onion and garlic in foil with olive oil, salt, and pepper, then roast for 20 to 25 minutes.
Boil the cauliflower in salted water for 8 to 10 minutes until fork-tender.
Blend the cauliflower, roasted onion, garlic, vegetable broth, olive oil, lemon juice, curry powder, cayenne, salt, and pepper until smooth.
Taste and adjust seasonings as desired.
Serve with swirls of pesto, microgreens, and red pepper flakes, alongside naan.
