Creamy Mushroom Soup

Instructions
- Soak the dried shitake mushrooms in hot water for 15 minutes.
- Heat oil in a large pot over medium heat and add the fresh mushrooms, cooking until browned.
- Strain the soaking mushrooms, reserving the water, chop them, and add to the pot.
- Season with salt and pepper, then add shallots and garlic, cooking for another 2 minutes.
- Add the chicken broth and reserved mushroom liquid, bring to a boil, then turn off the heat and stir in the half and half.
