Ingredients

Mushrooms

  • 2 ounces dried shitake mushrooms
  • 1 pound fresh white or cremini mushrooms

Base

  • 2 tablespoons butter or extra virgin olive oil
  • 3.5 cups chicken broth
  • ½ cup half and half

Seasoning

  • to taste salt
  • to taste pepper

Aromatics

  • 2 tablespoons shallots, minced
  • 1 teaspoon minced garlic

Instructions

  1. Soak the dried shitake mushrooms in hot water for 15 minutes.
  2. Heat oil in a large pot over medium heat and add the fresh mushrooms, cooking until browned.
  3. Strain the soaking mushrooms, reserving the water, chop them, and add to the pot.
  4. Season with salt and pepper, then add shallots and garlic, cooking for another 2 minutes.
  5. Add the chicken broth and reserved mushroom liquid, bring to a boil, then turn off the heat and stir in the half and half.
