Creamy Mushroom Sauce

Ingredients

  • 1 tbsp Olive oil
  • 1 lb Cremini mushrooms (sliced; ~6 cups)
  • 2 tbsp Unsalted butter
  • 4 cloves Garlic (minced)
  • 1 tbsp Fresh thyme (plus more for garnish, if desired)
  • 1 cup Chicken broth, reduced sodium
  • 1 ½ cup Heavy cream
  • to taste Sea salt (optional)
  • to taste Black pepper (optional)

Instructions

  1. 1. Heat the olive oil in a large cast iron skillet over medium-high heat until shimmering.
  2. 2. Add the sliced mushrooms and sauté until browned and the liquid evaporates.
  3. 3. Reduce heat to medium-low, push mushrooms to the side, and add butter, garlic, and thyme; sauté until fragrant.
  4. 4. Add chicken broth to deglaze the pan, scraping up any browned bits, and simmer until reduced by half.
  5. 5. Stir in the heavy cream and simmer until the sauce thickens to your liking.
  6. 6. Season with salt and pepper to taste, and garnish with more thyme if desired.
