Instructions
- Pat the chicken dry and season with salt and pepper.
- Heat oil in a skillet over medium-high heat and sear the chicken until browned and cooked through, then keep warm.
- In the same skillet, add mushrooms, bacon, garlic, thyme, and Cajun seasoning; cook until mushrooms are browned.
- Stir in heavy cream and bring to a simmer.
- Add parmesan cheese and stir until the sauce is smooth.
- Return the chicken to the skillet, cover with sauce, and heat through.
