Ingredients

  • 8 oz mushrooms
  • 4 cloves garlic
  • 4 pieces boneless, skinless chicken thighs
  • 1 Tbsp cooking oil
  • ½ cup chicken broth
  • 1 cup half and half
  • ¼ cup grated Parmesan
  • to taste salt and pepper
  • for garnish parsley (optional)

Instructions

  1. Wash and slice the mushrooms, and mince the garlic.
  2. Season the chicken thighs with salt and pepper.
  3. Heat a skillet over medium heat and add cooking oil.
  4. Cook the chicken thighs in the skillet until golden brown, about 5 minutes per side, then remove and keep warm.
  5. Add minced garlic to the skillet and sauté for one minute.
  6. Add sliced mushrooms and sauté until softened, about 5-7 minutes.
  7. Pour in chicken broth, stirring to dissolve browned bits from the skillet.
  8. Add half and half, bring to a simmer, then reduce heat and simmer for about five minutes.
  9. Stir in grated Parmesan until melted, and season the sauce with salt and pepper as needed.
  10. Return the chicken to the skillet, spoon sauce over it, and heat through.
  11. Garnish with parsley if desired.
