Creamy Garlic Mushroom Chicken

Instructions
- Wash and slice the mushrooms, and mince the garlic.
- Season the chicken thighs with salt and pepper.
- Heat a skillet over medium heat and add cooking oil.
- Cook the chicken thighs in the skillet until golden brown, about 5 minutes per side, then remove and keep warm.
- Add minced garlic to the skillet and sauté for one minute.
- Add sliced mushrooms and sauté until softened, about 5-7 minutes.
- Pour in chicken broth, stirring to dissolve browned bits from the skillet.
- Add half and half, bring to a simmer, then reduce heat and simmer for about five minutes.
- Stir in grated Parmesan until melted, and season the sauce with salt and pepper as needed.
- Return the chicken to the skillet, spoon sauce over it, and heat through.
- Garnish with parsley if desired.
