Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • to taste salt
  • to taste pepper
  • 12 ounces mushrooms, sliced
  • 4 tablespoons butter
  • 1 teaspoon Italian seasoning
  • 1 tablespoon minced garlic
  • 2 teaspoons lemon juice
  • 1 tablespoon chopped parsley

Instructions

  1. Heat olive oil in a large pan over medium-high heat and season chicken with salt and pepper.
  2. Cook the chicken in a single layer for 3-4 minutes per side until golden brown, then remove and keep warm.
  3. Melt 1 tablespoon of butter in the same pan and add the mushrooms, seasoning with salt and pepper.
  4. Cook mushrooms for 4-5 minutes until tender and golden brown.
  5. Return the chicken to the pan, add the remaining butter and Italian seasoning, stirring until melted.
  6. Add garlic and cook for 1 minute, then stir in lemon juice and parsley before serving.
