Ingredients

The chicken

  • 1 lb. chicken breast
  • 4 small/medium chicken breasts

The seasoning

  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon dried thyme
  • ½ teaspoon ground mustard
  • ½ teaspoon dried basil
  • ¼ teaspoon ground pepper
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon sea salt
  • ¼ teaspoon paprika
  • ½ teaspoon brown sugar

The sauce

  • ¼ large onion, minced
  • 1 head garlic, peeled and minced
  • ¼ cup white wine
  • 8 tablespoons salted butter, sliced
  • 4 sprigs fresh thyme
  • to taste fresh herbs for serving

Instructions

  1. Prepare the chicken seasoning by mixing all seasoning ingredients in a bowl.
  2. Pound the chicken breasts to an even thickness and season both sides with the prepared seasoning.
  3. Heat a skillet over medium-high heat and melt 2 tablespoons of butter.
  4. Brown the chicken breasts in the skillet for 2-3 minutes on each side, then remove from heat.
  5. Reduce the heat to medium and sauté the minced onion for 2 minutes.
  6. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  7. Deglaze the pan with white wine and let it cook down for 1 minute.
  8. Add the remaining butter and fresh thyme to the skillet, stirring until melted.
  9. Return the chicken to the skillet, coating it in the butter sauce.
  10. Cover the skillet and cook until the chicken reaches an internal temperature of 165ºF.
