Ingredients

The chicken

  • 1½ - 2 lbs chicken thighs
  • to taste salt
  • to taste ground black pepper

The sauce

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 6 oz cremini mushrooms, trimmed
  • ½ cup chicken broth
  • ½ cup whipping cream
  • ¼ teaspoon salt
  • 3 dashes cayenne pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley

Instructions

  1. Wash and dry the chicken thighs, then season with salt and pepper.
  2. Sauté the chicken thighs in olive oil in the Instant Pot until browned on both sides.
  3. Remove excess fat, then add garlic and sauté briefly before adding mushrooms, chicken broth, whipping cream, salt, and cayenne pepper.
  4. Cover and cook on high pressure for 10 minutes, then perform a quick release.
  5. Add lemon juice and parsley, stir, and switch to sauté mode to reduce the sauce if needed.
  6. Serve immediately, preferably with spaghetti.
