Ingredients

The chicken

  • 1½ - 2 lbs. chicken thighs
  • 5 cloves garlic
  • 1 tablespoon chopped parsley

The seasoning and sauce

  • salt
  • ground black pepper
  • 3 tablespoons honey
  • 3 tablespoons dijon mustard
  • 1 tablespoon soy sauce
  • ½ cup chicken broth
  • 1 teaspoon olive oil

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Mix honey, dijon mustard, soy sauce, and chicken broth in a bowl.
  3. Set the Instant Pot to Sauté mode and heat olive oil.
  4. Sear the chicken thighs until golden brown.
  5. Add garlic and the honey mustard mixture to the pot.
  6. Cover and cook on High Pressure for 10 minutes, then perform a Quick Release.
  7. Add chopped parsley and reduce the sauce if desired.
  8. Serve with spaghetti or rice.
