Instructions
- Season the chicken thighs with salt and pepper.
- Mix honey, dijon mustard, soy sauce, and chicken broth in a bowl.
- Set the Instant Pot to Sauté mode and heat olive oil.
- Sear the chicken thighs until golden brown.
- Add garlic and the honey mustard mixture to the pot.
- Cover and cook on High Pressure for 10 minutes, then perform a Quick Release.
- Add chopped parsley and reduce the sauce if desired.
- Serve with spaghetti or rice.
