Honey Mustard Chicken Thighs

Ingredients

The marinade

  • Juice of 2 lemons lemons
  • ¼ cup extra virgin olive oil
  • 1 teaspoon garlic powder
  • 2 pounds bone-in, skin-on chicken thighs
  • to taste coarse sea salt
  • to taste freshly ground black pepper

The honey mustard sauce

  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme leaves, minced
  • 1 teaspoon Dijon mustard
  • 2 tablespoons raw organic honey, melted

Instructions

  1. Preheat the oven to 400°F with the rack in the middle.
  2. Combine lemon juice, olive oil, and garlic powder in a mixing bowl and stir to combine.
  3. Add the chicken thighs to the marinade and coat them well.
  4. Season the thighs with salt and pepper.
  5. Place the chicken thighs skin side down on an elevated rack on a rimmed baking sheet.
  6. Roast the chicken in the oven for 30 minutes.
  7. While the chicken is cooking, mix garlic, thyme, mustard, and honey in a small bowl.
  8. Remove the chicken from the oven and brush the honey mustard on both sides.
  9. Flip the chicken skin-side up and return to the oven for 5-10 minutes until cooked through and browned.
  10. Brush on extra honey mustard if desired before serving.
