Ingredients

The chicken

  • 6 pieces bone-in, skin-on chicken thighs

The marinade

  • cup olive oil
  • ¼ cup lemon juice
  • ½ teaspoon lemon zest
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon paprika
  • 2 tablespoons chopped fresh parsley
  • as needed none lemon wedges for garnish
  • as needed none cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, garlic, oregano, and paprika.
  3. Add the chicken thighs to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 30 minutes.
  4. Coat a sheet pan with cooking spray and arrange the chicken thighs on it in a single layer.
  5. Bake for 40-45 minutes until the chicken is browned and cooked through.
  6. Sprinkle with fresh parsley and garnish with lemon wedges before serving.
