Instructions
- Preheat the oven to 400°F.
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, garlic, oregano, and paprika.
- Add the chicken thighs to the bowl and toss to coat with the marinade. Cover and refrigerate for at least 30 minutes.
- Coat a sheet pan with cooking spray and arrange the chicken thighs on it in a single layer.
- Bake for 40-45 minutes until the chicken is browned and cooked through.
- Sprinkle with fresh parsley and garnish with lemon wedges before serving.
