Ingredients

The chicken

  • 8 large bone-in skin-on chicken thighs

The seasoning

  • ¼ cup olive oil
  • 1 Tbsp lemon zest
  • 5 cloves garlic
  • 4 tsp Italian seasoning
  • 2 tsp paprika
  • to taste kosher salt
  • to taste freshly ground black pepper

For serving

  • 1 large lemon (cut into wedges)

Instructions

  1. Preheat the oven to 400°F and adjust the oven rack to one level above center.
  2. Line a baking sheet with aluminum foil and place a wire cooling rack on top, spraying it with non-stick cooking spray.
  3. In a large mixing bowl, whisk together olive oil, lemon zest, minced garlic, Italian seasoning, and paprika.
  4. Pat the chicken thighs dry with paper towels and toss them in the seasoning mixture until evenly coated.
  5. Place the chicken thighs skin side down on the rack, season with salt and pepper, then flip them skin side up and season again.
  6. Bake in the preheated oven for about 35 to 45 minutes, until the skin is browned and the internal temperature reaches 175°F.
  7. For extra crispiness, broil for the last 1 to 3 minutes, keeping a close eye on them.
  8. Serve warm with lemon wedges for spritzing.
