Instructions
- Preheat the oven to 400°F and adjust the oven rack to one level above center.
- Line a baking sheet with aluminum foil and place a wire cooling rack on top, spraying it with non-stick cooking spray.
- In a large mixing bowl, whisk together olive oil, lemon zest, minced garlic, Italian seasoning, and paprika.
- Pat the chicken thighs dry with paper towels and toss them in the seasoning mixture until evenly coated.
- Place the chicken thighs skin side down on the rack, season with salt and pepper, then flip them skin side up and season again.
- Bake in the preheated oven for about 35 to 45 minutes, until the skin is browned and the internal temperature reaches 175°F.
- For extra crispiness, broil for the last 1 to 3 minutes, keeping a close eye on them.
- Serve warm with lemon wedges for spritzing.
