Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with aluminum foil and a metal cooling rack.
- Mix garlic powder, salt, and pepper in a small bowl and set aside.
- Trim excess skin from the chicken thighs and pat them dry with a paper towel.
- Rub the spice mixture onto the chicken thighs and let them sit for 10-15 minutes.
- Whisk together olive oil and honey, then drizzle over the chicken thighs.
- Place the chicken on the wire rack and bake for 30-35 minutes until the internal temperature reaches 160ºF.
- Let the chicken rest for at least 5 minutes before serving.
