Ingredients

The chicken

  • 2-2.5 pounds chicken thighs
  • to taste salt
  • to taste pepper
  • 1-2 tablespoons cooking oil

The sauce

  • ½ medium onion, sliced
  • teaspoons minced garlic
  • 1-2 teaspoons thyme
  • 3 teaspoons Creole seasoning
  • tablespoons stone ground or whole grain mustard
  • 3 tablespoons honey
  • cup chicken broth

Instructions

  1. Pat dry the chicken thighs and season with salt, pepper, and Creole seasoning.
  2. Preheat the oven to 350°F (175°C).
  3. Heat a skillet over medium-high heat and fry the chicken thighs for about 3 minutes on each side until golden brown.
  4. Remove the chicken and add sliced onion, garlic, and thyme to the skillet, stirring for about 30 seconds.
  5. In a bowl, whisk together the Creole seasoning, mustard, and honey.
  6. Deglaze the skillet with chicken stock, scraping up any food particles, and bring to a boil.
  7. Pour the mustard mixture into the skillet and let it simmer for 1-2 minutes.
  8. Return the chicken thighs to the skillet, coating them in the sauce.
  9. Transfer the skillet to the oven and bake for about 25-30 minutes until the chicken is cooked through.
