Instructions
- Pat dry the chicken thighs and season with salt, pepper, and Creole seasoning.
- Preheat the oven to 350°F (175°C).
- Heat a skillet over medium-high heat and fry the chicken thighs for about 3 minutes on each side until golden brown.
- Remove the chicken and add sliced onion, garlic, and thyme to the skillet, stirring for about 30 seconds.
- In a bowl, whisk together the Creole seasoning, mustard, and honey.
- Deglaze the skillet with chicken stock, scraping up any food particles, and bring to a boil.
- Pour the mustard mixture into the skillet and let it simmer for 1-2 minutes.
- Return the chicken thighs to the skillet, coating them in the sauce.
- Transfer the skillet to the oven and bake for about 25-30 minutes until the chicken is cooked through.
