Ingredients

The marinade

  • ¼ cup light olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • to taste Kosher salt
  • to taste black pepper

The main ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 ½ pounds Brussels sprouts, halved
  • ¼ large red onion, sliced

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet.
  2. In a bowl, whisk together olive oil, lemon juice, mustards, honey, garlic, salt, and pepper.
  3. Coat the chicken thighs in the marinade and place them on the baking sheet.
  4. In the same bowl, combine Brussels sprouts and red onion with oil and lemon juice, then arrange around the chicken.
  5. Roast in the oven for 30 to 35 minutes until the chicken is golden brown and cooked through.
