Ingredients

  • 2 ½ to 3 pounds bone-in skin-on chicken thighs
  • ¾ pound Brussels sprouts
  • 1 medium yellow onion
  • 1 medium tart apple
  • 5 sprigs fresh rosemary

The seasoning and dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • ½ tablespoon honey
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 425°F and position racks in the center and upper thirds.
  2. Arrange the onion, apple slices, and Brussels sprouts on a large baking sheet.
  3. Drizzle with 1 tablespoon of oil, honey, mustard, ½ teaspoon salt, and ¼ teaspoon pepper, then toss to coat.
  4. Nestle the chicken thighs skin side up on the baking sheet and pat them dry.
  5. Season the chicken with the remaining salt and pepper, drizzle with the remaining oil, and place a sprig of rosemary on each thigh.
  6. Bake for 15 minutes, then stir the vegetables and continue baking for another 5 to 10 minutes until the chicken reaches 165°F.
  7. Remove from the oven, discard the rosemary sprigs, and broil for 2 to 3 minutes for crispy skin.
  8. Serve hot with the apples and vegetables.
