Instructions
- Preheat the oven to 425°F and position racks in the center and upper thirds.
- Arrange the onion, apple slices, and Brussels sprouts on a large baking sheet.
- Drizzle with 1 tablespoon of oil, honey, mustard, ½ teaspoon salt, and ¼ teaspoon pepper, then toss to coat.
- Nestle the chicken thighs skin side up on the baking sheet and pat them dry.
- Season the chicken with the remaining salt and pepper, drizzle with the remaining oil, and place a sprig of rosemary on each thigh.
- Bake for 15 minutes, then stir the vegetables and continue baking for another 5 to 10 minutes until the chicken reaches 165°F.
- Remove from the oven, discard the rosemary sprigs, and broil for 2 to 3 minutes for crispy skin.
- Serve hot with the apples and vegetables.
