Ingredients

The chicken

  • 1 whole chicken (2-3 pounds)

The marinade

  • ¼ cup grapeseed oil or olive oil
  • ¼ cup balsamic vinegar
  • 1 teaspoon celtic sea salt

The apples

  • 4 apples, cored and sliced

The herbs

  • 4 sprigs rosemary

Instructions

  1. Rinse the chicken and pat it dry with a paper towel.
  2. Place the chicken in a 9 x 13 inch baking dish.
  3. Drizzle the chicken with oil and vinegar, then sprinkle it with salt.
  4. Arrange the sliced apples around the chicken in the baking dish.
  5. Place the sprigs of rosemary under the chicken.
  6. Bake at 350°F for 90 minutes, until the chicken is browned on the outside.
  7. Serve the chicken with the apples.
