Ingredients

The chicken

  • 1 1/4 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

The sauce

  • 2 teaspoons fresh rosemary leaves minced
  • 3 tablespoons butter melted
  • 1 1/4 teaspoons minced garlic
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • lemon slices and rosemary sprigs for serving (optional)
  • cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a large pan over medium-high heat and cook the chicken for 3-5 minutes on each side until browned.
  4. Transfer the chicken to a baking dish coated with cooking spray.
  5. In a small bowl, mix rosemary, melted butter, garlic, chicken broth, and lemon juice.
  6. Pour the butter mixture over the chicken.
  7. Bake for 25 minutes or until the chicken is cooked through, reaching at least 165°F.
  8. Spoon the sauce over the chicken, sprinkle with parsley, and serve with lemon slices and rosemary sprigs if desired.
