Apple Cider Chicken Skillet

The chicken

The sauce and apples

fresh apple cider

Dijon mustard

firm sweet apples, cored and cut into ½-inch slices

The cooking oil

extra-virgin olive oil
Instructions
- Heat 2 teaspoons of oil in a large skillet over medium-high heat.
- Season the chicken with salt and pepper, then add to the skillet and cook until browned and cooked through.
- Remove the chicken and cover to keep warm.
- In a bowl, mix the apple cider and mustard.
- Wipe the skillet clean and add the remaining oil, then add the apple slices, salt, pepper, and rosemary, cooking until tender.
- Return the chicken to the skillet, pour the cider mixture over it, and cook until the liquid reduces by half.
- Serve warm with additional rosemary if desired.
