Apple Cider Chicken Skillet

Ingredients

The chicken

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

The sauce and apples

  • ½ cup fresh apple cider
  • 2 teaspoons Dijon mustard
  • 3 medium firm sweet apples, cored and cut into ½-inch slices
  • 2 teaspoons chopped fresh rosemary

The cooking oil

  • 4 teaspoons extra-virgin olive oil

Instructions

  1. Heat 2 teaspoons of oil in a large skillet over medium-high heat.
  2. Season the chicken with salt and pepper, then add to the skillet and cook until browned and cooked through.
  3. Remove the chicken and cover to keep warm.
  4. In a bowl, mix the apple cider and mustard.
  5. Wipe the skillet clean and add the remaining oil, then add the apple slices, salt, pepper, and rosemary, cooking until tender.
  6. Return the chicken to the skillet, pour the cider mixture over it, and cook until the liquid reduces by half.
  7. Serve warm with additional rosemary if desired.
