Cider Braised Chicken

Instructions
- Preheat the oven to 400°F.
- Heat 2 tbsp of butter in a large skillet over medium-high heat.
- Add sliced onions, apple slices, and ½ cup of apple cider to the skillet and cook for 15-20 minutes until browned and softened.
- Pound the chicken breasts to about 1 inch thick and season both sides with thyme, salt, and pepper.
- Set the cooked onions aside, add the remaining 2 tbsp of butter to the skillet, and sear the chicken for 5 minutes on each side.
- In a small bowl, mix the remaining ½ cup of apple cider, chicken broth, and arrowroot powder.
- Add the onions back to the skillet with the broth mixture and whisk until thickened, then turn off the heat.
- Return the chicken to the skillet, cover with the onion and apple mixture, and add thyme sprigs.
- Transfer the skillet to the oven and bake for 8-10 minutes until the internal temperature reaches 165°F.
- Sprinkle with parmesan and remove thyme sprigs before serving.
