Apple and Cabbage Oven Baked Chicken

Instructions
- 1. Preheat the oven to 375°F.
- 2. Thinly slice the onion and apples, and shred the cabbage.
- 3. In an oven-safe dish, layer ⅓ of the cabbage, followed by half of the onion and half of the apples.
- 4. Repeat with another ⅓ of the cabbage, the remaining onions, and apples, then top with the remaining cabbage.
- 5. Place the chicken breasts on top of the cabbage and add rosemary if desired.
- 6. In a bowl, mix apple juice, apple cider vinegar, Dijon mustard, rosemary, salt, and pepper, then pour over the chicken and cabbage.
- 7. Cover with aluminum foil and bake for about an hour until the chicken is cooked through.
- 8. Remove chicken, slice it, and serve on top of the cabbage and apple mixture.
