Ingredients

The main ingredients

  • 2 pieces boneless skinless chicken breasts
  • 1 small onion
  • ½ small Savoy cabbage
  • 1 piece Red Delicious apple
  • 1 piece Golden Delicious apple

The liquids and seasonings

  • ½ cup all natural unsweetened apple juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2-3 sprigs fresh rosemary
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. Thinly slice the onion and apples, and shred the cabbage.
  3. 3. In an oven-safe dish, layer ⅓ of the cabbage, followed by half of the onion and half of the apples.
  4. 4. Repeat with another ⅓ of the cabbage, the remaining onions, and apples, then top with the remaining cabbage.
  5. 5. Place the chicken breasts on top of the cabbage and add rosemary if desired.
  6. 6. In a bowl, mix apple juice, apple cider vinegar, Dijon mustard, rosemary, salt, and pepper, then pour over the chicken and cabbage.
  7. 7. Cover with aluminum foil and bake for about an hour until the chicken is cooked through.
  8. 8. Remove chicken, slice it, and serve on top of the cabbage and apple mixture.
