Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, toss apple slices and cubed sweet potatoes with 1 tablespoon of olive oil and chopped rosemary.
- Season the chicken thighs with salt and pepper, then sear them in a skillet with olive oil until golden brown.
- Transfer the chicken to a plate and melt butter in the same skillet.
- Whisk together apple cider, honey, and Dijon mustard in the skillet, then bring to a simmer.
- Return the chicken to the skillet and add apple slices, sweet potatoes, and rosemary.
- Transfer the skillet to the oven and bake for 15 to 20 minutes until the chicken is cooked through and sweet potatoes are tender.
- Serve immediately, garnished with fresh pomegranate seeds if desired.
