Ingredients

  • 1 sweet potato, peeled and cubed
  • 1 apple, sliced
  • 2 tablespoons olive oil, divided
  • 4 sprigs fresh rosemary, divided
  • 6 pieces chicken thighs, boneless, skin-on, trimmed
  • to taste salt
  • to taste ground black pepper
  • 1 tablespoon unsalted butter
  • cup apple cider
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss apple slices and cubed sweet potatoes with 1 tablespoon of olive oil and chopped rosemary.
  3. Season the chicken thighs with salt and pepper, then sear them in a skillet with olive oil until golden brown.
  4. Transfer the chicken to a plate and melt butter in the same skillet.
  5. Whisk together apple cider, honey, and Dijon mustard in the skillet, then bring to a simmer.
  6. Return the chicken to the skillet and add apple slices, sweet potatoes, and rosemary.
  7. Transfer the skillet to the oven and bake for 15 to 20 minutes until the chicken is cooked through and sweet potatoes are tender.
  8. Serve immediately, garnished with fresh pomegranate seeds if desired.
