Paleo Cranberry Apple Chicken Thighs

Ingredients

The chicken

  • 4 large bone-in, skin-on chicken thighs
  • to taste salt
  • to taste freshly cracked black pepper

The cooking fat

  • 1 tablespoon ghee or olive oil

The fruit and aromatics

  • 1 medium apple, cored and sliced
  • 2 cloves garlic, minced
  • 5 sprigs fresh rosemary

The liquids

  • cup Ocean Spray® Craisins® Original Dried Cranberries
  • cup Ocean Spray® 100% Juice Organic Cranberry Apple
  • cup chicken stock

Instructions

  1. Preheat the oven to 375°F.
  2. Season the chicken thighs with salt and pepper on both sides.
  3. Heat a large oven-safe skillet over medium-high heat and add the ghee.
  4. Once melted, place the chicken thighs skin-side down in the skillet and cook for 7 minutes until browned.
  5. Transfer the skillet to the oven and cook for 13 minutes or until the internal temperature reaches 160°F.
  6. Remove the chicken and let it rest on a plate.
  7. In the same skillet, add apple slices and Craisins, cooking for 2-3 minutes until the apples are golden and softened.
  8. Add the minced garlic and sauté for 30-60 seconds until fragrant.
  9. Stir in the cranberry apple juice, chicken stock, and rosemary, bringing the mixture to a boil.
  10. Reduce the heat and simmer for 2-4 minutes until the sauce reduces slightly.
  11. Adjust seasoning if needed, return the chicken to the skillet, and serve with the sauce.
