Paleo Cranberry Apple Chicken Thighs

Instructions
- Preheat the oven to 375°F.
- Season the chicken thighs with salt and pepper on both sides.
- Heat a large oven-safe skillet over medium-high heat and add the ghee.
- Once melted, place the chicken thighs skin-side down in the skillet and cook for 7 minutes until browned.
- Transfer the skillet to the oven and cook for 13 minutes or until the internal temperature reaches 160°F.
- Remove the chicken and let it rest on a plate.
- In the same skillet, add apple slices and Craisins, cooking for 2-3 minutes until the apples are golden and softened.
- Add the minced garlic and sauté for 30-60 seconds until fragrant.
- Stir in the cranberry apple juice, chicken stock, and rosemary, bringing the mixture to a boil.
- Reduce the heat and simmer for 2-4 minutes until the sauce reduces slightly.
- Adjust seasoning if needed, return the chicken to the skillet, and serve with the sauce.
