One Pan Chicken Apple And Squash Skillet

Ingredients

  • ½ unit delicata squash
  • 1 unit apple, roughly chopped into cubes
  • 1 tbsp avocado oil
  • 1 tbsp fresh thyme, chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp cayenne pepper
  • 2 unit organic chicken breasts
  • 1 tbsp fat of choice
  • 2 big handfuls kale, chopped

Instructions

  1. Preheat the oven to 425°F.
  2. Cut the apple into cubes and place in a large bowl.
  3. Halve the squash lengthwise, scoop out the seeds, and slice it crosswise into ¼-inch pieces. Toss with the apples in the bowl.
  4. Add avocado oil, thyme, salt, pepper, and cayenne pepper to the bowl and mix to coat.
  5. Season the chicken with salt and pepper.
  6. Heat a cast iron skillet over medium heat and add the fat of choice.
  7. Once melted, add the chicken to the skillet and brown for 5 minutes on each side.
  8. Add the squash and apple mixture around the chicken in the skillet.
  9. Transfer the skillet to the oven and bake for about 30 minutes until the chicken is cooked through.
  10. In the last 10 minutes of cooking, add the kale to the pan.
  11. Remove from the oven, plate, and enjoy!
