One Pan Chicken Apple And Squash Skillet

Instructions
- Preheat the oven to 425°F.
- Cut the apple into cubes and place in a large bowl.
- Halve the squash lengthwise, scoop out the seeds, and slice it crosswise into ¼-inch pieces. Toss with the apples in the bowl.
- Add avocado oil, thyme, salt, pepper, and cayenne pepper to the bowl and mix to coat.
- Season the chicken with salt and pepper.
- Heat a cast iron skillet over medium heat and add the fat of choice.
- Once melted, add the chicken to the skillet and brown for 5 minutes on each side.
- Add the squash and apple mixture around the chicken in the skillet.
- Transfer the skillet to the oven and bake for about 30 minutes until the chicken is cooked through.
- In the last 10 minutes of cooking, add the kale to the pan.
- Remove from the oven, plate, and enjoy!
