Instructions
- Make the seasoning rub by combining all rub ingredients in a small bowl.
- Season the chicken with the rub, ensuring it is well coated.
- Chop the butternut squash and brussels sprouts, then toss them in a bowl with avocado oil, salt, pepper, garlic powder, and chili powder.
- Preheat the oven to 425°F.
- Heat a cast iron skillet over medium heat and add the fat.
- Cook the chicken in the skillet for 5 minutes on each side.
- Add the squash and brussels sprouts around the chicken in the skillet.
- Transfer the skillet to the oven and bake for 30 minutes.
- Remove from the oven and let cool for a few minutes before serving.
