Ingredients

Seasoning Rub

  • tsp salt
  • tsp pepper
  • tsp paprika
  • tsp garlic powder
  • tsp chili powder

Skillet

  • 1 tbsp fat (bacon fat or oil)
  • 3 lbs bone-in chicken (drumsticks and thighs or chicken quarters)
  • 1 small butternut squash, cut into small square pieces
  • 1 lb brussels sprouts, ends cut off and halved
  • 1 tbsp avocado oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp chili powder

Instructions

  1. Make the seasoning rub by combining all rub ingredients in a small bowl.
  2. Season the chicken with the rub, ensuring it is well coated.
  3. Chop the butternut squash and brussels sprouts, then toss them in a bowl with avocado oil, salt, pepper, garlic powder, and chili powder.
  4. Preheat the oven to 425°F.
  5. Heat a cast iron skillet over medium heat and add the fat.
  6. Cook the chicken in the skillet for 5 minutes on each side.
  7. Add the squash and brussels sprouts around the chicken in the skillet.
  8. Transfer the skillet to the oven and bake for 30 minutes.
  9. Remove from the oven and let cool for a few minutes before serving.
