Creamy Bacon Chicken and Brussels Sprouts Skillet

Instructions
- Preheat the oven to 400°F and line two medium sheet pans with parchment paper.
- Chop the brussels sprouts and place them on one sheet pan, drizzling with avocado oil and seasoning with salt and pepper before tossing to mix.
- Add the chicken to the other sheet pan and season with Italian seasoning.
- Roast both the chicken and brussels sprouts for 20-25 minutes until the brussels sprouts are browning and tender and the chicken is cooked through.
- While roasting, cook the diced bacon in a large skillet over medium heat until crispy, then set aside on a paper towel.
- Prep the onions, mushrooms, garlic, and sage.
- In the same skillet used for the bacon, cook the onions and mushrooms over medium heat until softened, about 4-5 minutes.
- Add coconut milk, minced garlic, salt, pepper, and sage to the skillet, stirring to combine and simmering on low until the chicken and brussels are ready.
- Once cooked, remove the chicken from the oven, let cool slightly, and cut into small pieces.
- Combine the bacon, chicken pieces, and brussels sprouts in the skillet with the sauce, mixing well to coat before serving.
