Ingredients

The main ingredients

  • lbs brussels sprouts, ends removed and halved
  • 1 tbsp avocado oil
  • ½ tsp salt
  • ½ tsp pepper
  • lbs chicken thighs
  • 1 tbsp Italian seasoning
  • 6 pieces bacon, diced

The creamy sauce

  • ½ onion thinly sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh sage, diced
  • 1 cup coconut milk
  • ½ tsp sea salt
  • ¼ tsp ground black pepper

Instructions

  1. Preheat the oven to 400°F and line two medium sheet pans with parchment paper.
  2. Chop the brussels sprouts and place them on one sheet pan, drizzling with avocado oil and seasoning with salt and pepper before tossing to mix.
  3. Add the chicken to the other sheet pan and season with Italian seasoning.
  4. Roast both the chicken and brussels sprouts for 20-25 minutes until the brussels sprouts are browning and tender and the chicken is cooked through.
  5. While roasting, cook the diced bacon in a large skillet over medium heat until crispy, then set aside on a paper towel.
  6. Prep the onions, mushrooms, garlic, and sage.
  7. In the same skillet used for the bacon, cook the onions and mushrooms over medium heat until softened, about 4-5 minutes.
  8. Add coconut milk, minced garlic, salt, pepper, and sage to the skillet, stirring to combine and simmering on low until the chicken and brussels are ready.
  9. Once cooked, remove the chicken from the oven, let cool slightly, and cut into small pieces.
  10. Combine the bacon, chicken pieces, and brussels sprouts in the skillet with the sauce, mixing well to coat before serving.
